I don’t know if you follow me on Facebook or not, but I love to cook and bake. It is what I do when I am stressed. It soothes me. Luckily, I don’t really consume it.
In my house, the family’s favourite — my meatballs.
Years ago, I was at my sister’s watching her make meatballs. As she chopped and diced and stirred the ingredients, I watched. It occurred to me that all of the items that she was utilizing were the same items in my homemade salsa. As my sister was not a cook, and still is not, I waited until she was finished before I said anything.
So here is my famous (but no one can believe it) recipe for meatballs.
2 jars of hot salsa (in our house, the hotter, the better)
2 jars of grape jelly
2-3 pounds meatballs.
I melt the grape jelly and salsa together with the little bit of water that I use to get all the spicy goodness out of the jars. Then add the meatballs.
I put them in the oven at 300 degrees. After a few hours, I will lower the temp to 200 degrees and let them cook all day. The longer the meatballs cook, the more flavourful they are.
You can also do them in the crockpot or instapot.
I serve these as an appetizer or over rice with a salad.
I know it sounds weird, but try it.
